There are no recent studies that can justify the use of sweet iris as a medicinal plant. The vitamin content makes sweet iris an important part of the early herbs in cures for winter fatigue.
Today, the leaves, seeds and stem of the fresh plant are used as a schnapps herb and spice. The seeds are used as a sweetener for sour fruits, and the leaves and stems are used in salads. The green, immature seeds can be eaten as candy. When cooked, the leaves lose their aniseed flavor and resemble kale.
Ingredients
The scent and taste of sweet clover are due to essential oil containing, among other things, anethole, caryophyllene, limonene, myrcene and estragole. The plant also contains vitamins C and A.
